KetoHybrid Mayo

Scale this recipe up or down based on your needs.

Yield: 24 servings or approximately 1 1/2 cups
Serving Size: 1 tablespoon
Nutrition: 0.1 net carb
Prep Time: 3 to 5 minutes

2 egg yolks
1 tsp Dijon-style mustard
2 tsp lemon juice
1 tbsp white wine vinegar
1⁄2 tsp salt
pinch of cayenne pepper
1 cup olive oil

  1. Briefly blend all ingredients except oil in a food processor or blender on low setting (30 seconds).
  2. Slowly drizzle in the oil with the mixer still running (if your blender allows) on low (2-3 minutes).
  3. Once all ingredients have been added and the mayonnaise has firmed up, you can add a teaspoon of distilled water (boiled and cooled water) to thin it if you like.
  4. Refrigerate.
